Cream Garden
Alti Gulskogen · second floor

A garden on the
second floor.

Crêpe & waffle 149–189 · Mocktail 99 · Milkshake 109

French entremets under mirror glaze, Belgian waffles straight off the iron and mocktails in cut crystal — in a room of roses and cherry blossom at Alti Gulskogen.

The counter

The counter is the shop.

Behind the glass stand small French entremets under mirror glaze — mango, passion fruit, raspberry, pistachio — beside whole cakes, tarts, macarons and cookies. What is in the counter changes through the week, because it is made in small batches.

Behind the glass

Priced in chalk.

Rose cakes, mango domes and raspberry tarts, each on its own gold disc, each with its own price written on a small chalk tag. Filmed through the glass on an ordinary afternoon.

FilmTrompe-l'œil

Trompe-l'œil

The mango that is a cake.

It looks like a mango and it is cut like one. Under the sprayed shell there is mousse, and in the middle a frozen fruit centre that runs out the moment the cake is opened.

The counter, explained

Five layers, one bite.

The small, glossy cakes in the counter are entremets: five layers built one at a time, with a freeze between each. Nothing is added at the table — everything you see was built while the cake was frozen.

FilmA dome, opened
  1. 1Mirror glazeThe glossy outer coat. It is the glaze that makes the cake reflect the room.
  2. 2MousseThe airy body. It carries the shape — which is why a dome is round, not square.
  3. 3InsertA core of fruit or cream, frozen separately and set into the middle.
  4. 4CrunchA thin, crisp layer. This is what keeps a dome from being soft all the way through.
  5. 5BaseSponge or shortcrust that holds everything together when it is lifted.

From the bar

Coffee with roses on top.

Iced coffee under a berry foam, finished with dried rose petals. Beside it: twelve mocktails in cut crystal, nine milkshakes and matcha four ways — with ice, white, with strawberry or plain.

On the tray

Roses, hearts and domes.

Every shape in the counter is moulded, frozen, glazed and lifted onto its own gold disc — one at a time.

The room

Roses, blossom and velvet.

Arched niches lined with roses, white cherry blossom trees, marble tables on gold legs and velvet chairs in pink and petrol green. The room is the reason people photograph their cake before they eat it.

Look for the arch with the name on it.

The gold cartouche hangs above the entrance on the second floor, lit from within. Once you have rounded the corner it is the only thing you see — and the name is set into the floor in front of it.

FilmCocoa butter, not icing

Sprayed while still frozen.

The matte, velvet skin on a dome is cocoa butter sprayed on while the cake is still frozen. It sets the moment it lands, and that is why the surface looks like suede rather than icing.
